This November, we’re showcasing a standout wine: an organic Colline Novaresi DOC, crafted from a 50/50 blend of Nebbiolo and Uva Rara. Grown in the Vigna Cristiana vineyard, the volcanic soils impart a distinctive minerality to the wine.
Aged for six months in steel, it offers vibrant aromas of red fruit, cherry, and spice. On the palate, its bright acidity and soft tannins deliver a fresh and elegant finish.
The Wine
Nestled within the Mount Fenera Natural Park in Alto Piemonte, Podere ai Valloni is celebrated for producing wines of exceptional finesse. The estate’s 3.5-hectare vineyard, set in a naturally protected amphitheatre, thrives on ancient volcanic soils that give their wines a unique character.
Specialising in Nebbiolo, Vespolina, and Uva Rara, the estate remains committed to traditional winemaking. Certified organic since 2011, Podere ai Valloni shows a deep respect for the environment and local heritage. Thanks to their high-altitude location, their wines achieve balance and elegance, even in warmer years, embodying the distinct terroir of Boca.
The Winemaking
Grapes for this wine are grown on 35-year-old vines using the Guyot and Silvoz training methods, across 3 hectares of volcanic porphyry soil. With an organic approach to viticulture, the vineyard yields a modest 40 q/ha to ensure quality and concentration.
During harvest, only perfectly ripened bunches are selected, while under-ripe berries are removed. Fermentation begins with indigenous yeasts from pied de cuve and lasts 4 days on the skins before finishing off-skins. The wine matures for 6 months in stainless steel tanks, followed by several months of bottle aging for refinement.
